Recipe For Product Pindos Grasslands Feta Cheese

Cheese pie with Feta cheese and mint

Ingredients

  • 1 packet fyllo pastry
  • 700g Pindos Grasslands Feta cheese
  • 3 tbsps fine semolina
  • 1/2 cup milk
  • 3 eggs
  • 4 tbsps fresh mint, finely chopped
  • 1 cup olive oil
  • Sesame seeds
  • Freshly-ground pepper

Execution

  1. Place the cheese in a large bowl and break it up into pieces using a fork; do not mash. Whisk the eggs with the milk and pour over the cheese. Add the chopped mint, some pepper, sprinkle with the semolina and mix well.
  2. Preheat the oven to 180°C (with air).
  3. Brush a 35-cm baking dish with olive oil. Arrange the first pastry sheet on your worktop, and use a paintbrush to brush it with olive oil. Arrange some of the filling on the pastry lengthways, roll up, twist slightly and arrange on the baking dish, along the sides. Repeat the process with the second sheet of pastry and place the roll next to the first one. Repeat the process for all the pastry sheets.
  4. Drizzle the pie with some more olive oil and sesame seeds. Sprinkle slightly with water and bake in the preheated oven, covered with baking paper to make sure the top doesn’t burn. After about 45 minutes, uncover and continue cooking until golden brown.
